2 ripe avocados, diced
2 large tomatoes, diced
1/4 red onion, finely sliced
2 tbsp olive oil
1 tbsp red wine vinegar
Salt and pepper to taste
Method
In a large bowl, combine the diced avocados and tomatoes.
Add the sliced red onion, olive oil, and red wine vinegar.
Toss gently to combine and season with salt and pepper to taste.

1 bunch asparagus, trimmed
1 cup quinoa, cooked according to package instructions
2 tbsp butter
2 cloves garlic, minced
1 lemon, juiced
Method
Preheat oven to 200C (180C fan)/gas 6.
Season the salmon fillets with salt and pepper.
Heat the olive oil in a skillet over medium-high heat.
Add the salmon fillets and cook for 2-3 minutes per side, or until golden brown.
Transfer the salmon to a baking tray and place in the oven for 8-10 minutes, or until cooked through.
While the salmon is cooking, heat the butter in a skillet over medium heat.
Add the minced garlic and cook for 1-2 minutes, or until fragrant.
Add the asparagus and cook for 2-3 minutes, or until tender.
Stir in the cooked quinoa and lemon juice.
Season with salt and pepper to taste.
